Happy Summer!
I spent summer solstice weekend at gorgeous Lake George near the Adirondacks in upstate NY. It takes us about 40 minutes from our house to get there. I feel so fortunate that the the cleanest lake in the US is just a short trip. My husband and I like to kayak with our Shiba Inu, Mikan. He likes to be our beautiful masthead. He gets lots of smiles and “awws” as we pass by. We spent 5 hours in the water and traveled into the Dunham Bay Marsh this trip. Beautiful water lillies everywhere!

It’s still a bit challenging for us to find places to eat out with our dog and that has healthier vegan options. We like Spice Gyro and Kabob . They have several vegetarian options that you can ask to be made vegan by leaving off the feta cheese and yogurt.
So with summer comes the heat and the need to have nice refreshing drinks and cooling desserts.

Rose’ Tinted Glasses Mocktail
Ingredients
- 10 lychee
- 1 strawberry
- 1/4 cup water
- 1 dropper Rose' Tinted Glasses tincture Omakase Berries
- 1/4 cup sparkling water plain or lychee flavored
Instructions
- Blend lychee, strawberry, and water. Strain through a fine mesh strainer if you want it smoother. I'm all about fiber so I leave it in.
- Pour a 1/4 cup into a coupe glass. There should be enough for 3-4 servings.
- Add one dropper of tincture. Top with cold sparkling water. Serve immediately!

The recipe uses Oishii strawberries that are in both the tincture and blended with the lychee.
These strawberries are vertically farmed in New Jersey. They have several varieties: Omakase, Koyo, and Nikko. The ones I purchased via Weee were the Koyo berry. Omakase berries are in the tincture.
If you can’t find Oishii strawberries in your area or if you don’t want to spend a lot on them (they cost anywhere from 9.99 to 11.99 for each clamshell), feel free to use local or the best strawberries available to you. Also the tincture is optional but highly recommended. All of the flowers, fruit and mushrooms offer cognitive and mood benefits along with promoting liver and skin health.

I love to take the tincture straight or add it to a small amount of liquid. I’ve also been adding it to basil seed pudding. Basil seeds are a hydrophilic wonder similar to chia seeds. They absorb a lot of liquid. It can be plain water or your favorite non-dairy milk. The first time I saw basil seeds that we’re not for growing in your garden was in MT Supermarket in Austin, TX. They had basil seed drinks. You can find bags for basil seeds in Asian and some Middle Eastern markets. The best ones that I’ve found so far are made by a company called Zen Basil and they sell them on Amazon.

Strawberry Basil Seed Pudding Parfait
Ingredients
- 1 TBSP basil seeds Zen Basil
- 1/4 cup water room temperature, filtered
- 1/4 cup non-dairy milk
- sweetener to taste I like Monk Drops
- 1-2 droppers Apothekary Rose' Tinted Glasses Omakase Berries, optional
- 1-2 strawberries
Instructions
- Soak basil seeds for five minutes in plain water.
- Then add non-dairy milk. Mix to stir. Add favorite sweetener to taste. I add 4-6 drops of monk fruit.
- Cut the strawberries and arrange the pudding and strawberries in a parfait glass or bowl.
- Add tincture to the top. Serve immediately.
