I’ve made Strawberry Shortcake lots of times for the summer holidays.
I wanted to try something different this year with other seasonal fruit.
Organic cherries and blackberries were on sale so I made this version for July 4th. I’ve been making the shortcakes from Minimalist Baker for a couple months because the are gluten-free and use no palm oil.
I also just use chilled coconut cream. I don’t add any additional sugar.
