28 Days – Engine 2 Challenge

I kept seeing the Engine 2 Diet 28 day challenge at Whole Foods and I thought, “Why Not!”

I’ve been vegetarian for over 15 years but I still have a love affair with fat.
I’m not overweight and have no real health issues than lacking some upper body strength and occasional skin breakouts.
I’m working on changing both! I’ve been in contact with a plant-based trainer to help me be able to do a pull up maybe by the end of the year….I’m excited about building some hard veggie muscle!

So for the next 28 days, I will be eating a whole foods plant based diet that has no animal products (easy), processed food (not a problem – except for tortilla chips – see this funny pin) and no extracted oils (a little more difficult).  I have only been using olive oil, coconut oil, and and occasionally ghee at home, so it will just be cutting out these 3 and not being able to really eat out.   I thought about giving myself 2 days to indulge in some higher fat foods – Valentine’s Day and my birthday, but I’m going to try my hardest to come up with dishes to satisfy myself.

My first day is going well so far…most days are awesome when I eat my favorite Savory Oatmeal, see recipe here.
I’m still not sure how much avocado or nuts one is allowed to eat in one day, but I’m hoping not to overindulge in either.
Coconut is not recommended either.  I’m going to find out.
I’m also going to reread some of the info I learned about when I got my certificate in Plant Based Nutrition from the T. Colin Campbell Foundation via eCornell.  It will help me when I get a tortilla chip craving.

If you are interested in finding literature to support this way of eating, there are lots of books available, like the Engine 2 Diet, Forks Over Knives, The China Study etc.  You can also find great info and recipes online.

If you are a visual person and love to look at food, I suggest finding recipes via Pinterest.
